Chicken Parmesan with Vodka Sauce

Who doesn't love chicken parmesan?!? It's crispy chicken with gooey cheese, what can be better?! Well, using my vodka sauce recipe instead of traditional tomato sauce. If you haven't tried my vodka sauce recipe, do that this weekend! Save some for this chicken parm and have the rest in pasta. You're welcome ;-). As always, start with high quality ingredients (organic). Make sure to season in layers. If you haven't already realized, that's what I do with everything I make. If you season in layers (i.e. add seasoning, especially kosher salt in each step), your end product will be very flavorful and no, not salty. The key is to use a little in each step. With that being said, I season the chicken, and then season the flour, eggs and breadcrumbs, and of course the sauce. By doing this you'll have a very flavorful chicken parm. Make sure to shower it with freshly (always) grated paremsan cheese and a few strips of basil (didn't make it for the photo op because we were hungry... next time). All that makes this "just right."

Ingredients
  

  • 3 lbs organic chicken breasts
  • 2 cups organic unbleached all-purpose flour
  • 2 large organic eggs
  • 2 cups organic unseasoned bread crumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano crushed
  • 1 tsp dried basil

  • fresh cracked black pepper
  • organic olive oil
  • 2 tbs organic unsalted butter
  • 1 cup my vodka sauce https://zahavalox.com/rigatoni-with-vodka-sauce/
  • 2 cups whole milk mozzarella freshly grated
  • 1/2 cup paremsan cheese freshly grated
  • 4 tbs fresh basil
  • organic avocado oil

Instructions
 

  • Preheat oven to 350°F.
  • Take a chicken breast and place it between 2 pieces of plastic wrap. Pound out the chicken breast until it is in uniform thickness, ~1/4 inch. Repeat with remaining chicken. Season with 1/8 tsp of kosher salt and a few grinds of cracked black pepper on both sides of each chicken breast.

  • Set up the dredging station. Place all 3 pyrex dishes next to each other. In the first dish, place 2 cups of flour. Season with 1/4 tsp of kosher salt and a few grinds of black pepper. Mix to combine. In the second dish, whisk the 2 eggs and add 1/4 tsp of kosher salt and a few grinds of black pepper. In the 3rd dish, place the 2 cups of unseasoned bread crumbs, garlic powder, onion powder, crushed dried oregano, dried basil, 1/4 tsp of kosher salt and a few grinds of black pepper and whisk to combine. Take one of the pounded chicken cutlets and dredge it in the flour, shake off excess. Then place in the egg mixture. Lastly, place in the breadcrumbs. Press the breadcrumbs onto the chicken so it's fully coated. Place it on a large plate. Repeat with remaining chicken.

  • Heat a cast iron skillet with 2 tbs of avocado oil over medium high heat for 3 minutes. Place 2 chicken breasts in the skillet and 1 tbs of butter. Cook for 3 minutes and flip and cook for 3 more minutes. Place on the sheet pan and set aside. Place another 2 tbs of avocado oil in the pan and let it get hot for a minute. Place the 2 remaining pieces of chicken in the pan along with the other tbs of butter and cook for 3 minutes. Flip and cook for an additional 3 minutes. Place this on the sheet pan with the other 2 pieces. Place in the oven and cook for 10 minutes, until the thermometer reaches 160°F.

  • Meanwhile, grate the mozzarella cheese and parmesan cheese and set aside.
  • Remove the pan from the oven and place 2 tbs of my vodka sauce, recipe here https://zahavalox.com/rigatoni-with-vodka-sauce/ on each cutlet and then 1/4 cup of mozzarella cheese. Place back in the oven for 5 minutes until the cheese has melted. Finish with freshly grated parmesan cheese.
