Sage Cheeseburgers

I know it's a bit controversial - adding fillings to ground beef and calling it a burger, but i'm doing it! Most chefs will say adding anything besides salt and pepper to ground beef makes it a meatball or meatloaf. That's fine, I'll just say that this is darn good. The shallots add a mild onion flavor, the sage adds earthiness, the worchestire enhances the beef flavor, gruyere adds nuttiness, and the pickles add texture and acidity. The combo makes these controversial burgers "just right."

Ingredients
  

  • 16 oz organic grass fed beef
  • 1 tbs worchestire sauce
  • 10 fresh sage leaves
  • 1/2 shallot
  • 2 english muffins
  • 1/4 cup freshly grated gruyere cheese or cheese of your preference
  • organic bread and butter pickles for serving
  • organic olive oil

  • Fresh cracked black pepper

Instructions
 

  • Mince the shallots and the sage leaves.
  • In a medium bowl, mix together the ground beef, worchestire sauce, shallots sage, 1/2 tsp of kosher salt and 1/4 tsp of fresh cracked black pepper.
  • Form 2 patties. You want them to be a little wider than the bun you're using since they will shrink a little during cooking. Drizzle a little olive oil on both sides. Add a pinch of kosher salt and a few grinds of fresh cracked black pepper to both sides of each burger.
  • Preheat a grill, bbq, or cast iron (heavy bottom) skillet over medium high heat. Place the burgers on grill and leave them undisturbed for 5 minutes. Flip and cook for 3 more minutes. Then add the cheese and continue cooking for 2 more minutes. Note if doing on a stovetop, once you add the cheese cover them so the cheese melts.
  • Meanwhile, place a drizzle of olive oil on your english muffins or buns, and place on the grill or in a toaster oven and heat for a couple of minutes.
  • To plate, place the burger on the bottom bun, add some pickles, close and enjoy!

I served this with a large salad and grilled potatoes!
