Chicken Salad
I love a good chicken salad sandwich. Unfortunately, most delis make it with celery and I'm not a fan of raw celery. Most recipes out there start with rotisserie chicken. If that's your thing, then do you, but I don't like using store bought chicken. My previous post (which I've linked below) provides instructions on how to make flavorful poached chicken. It's simple, hands off and pretty quick! (Note, if you're looking for a vegetarian option, check out my chickpea salad recipe.) Anyway, the dressing is creamy and tangy with the combo of mayo, dijon, and lemon juice. The salad has great texture from the carrots, bell pepper, and almonds (sub for another nut if you don't like almonds or omit if you have an allergy). The cranberries add a nice slight sweetness to balance out the dish and the dill adds freshness. Let it sit in the fridge for the flavors to develop. It'll be "just right."

Ingredients
- 2 cups cooked organic chicken breasts https://zahavalox.com/poached-chicken-for-chicken-salad/
- 1/2 cup organic mayonnaise
- 1 tbs dijon mustard
- 1 organic lemon
- 1 tbs dill chopped
- 1 organic carrot peeled and diced
- 1/4 cup organic red bell pepper chopped
- 1/4 cup red onion finely chopped
- 1/4 cup almonds chopped
- 1/4 cup dried cranberries chopped
- Kosher Salt
- Fresh Cracked Black Pepper
Instructions
- In a medium bowl, combine the mayo, dijon mustard, and juiced lemon. Add 1/4 tsp of kosher salt and a few grinds of fresh cracked black pepper. Stir to combine.
- Peel and dice the carrot, finely dice the red onion, chop the dill, bell pepper, dried cranberries and almonds. Chop the cooked chicken into chunks or shred if you prefer that texture. Add the chicken carrots, red onion, dried cranberries and almonds to the bowl. Mix to combine. Add the fresh dill, another pinch of kosher salt and a few grinds of fresh cracked black pepper. Mix to combine. Taste for seasoning and see if another pinch of salt is needed.
- To serve you can make an open face sandwich. I toasted sourdough bread, topped with chicken salad and a few slices of avocado with a pinch of kosher salt to finish.
