Everything but the Bagel Breakfast Sandwich

I saw a similar-ish egg sandwich on social media but it needed a lot of help to make it "just right." I know I've succeeded as my husband has "ordered" this daily since I started making it. This sandwich is equally about the steps, as it is about the ingredients. I dip the bread in seasoned scrambled eggs which allows the Everything Bagel seasoning to stick to the bread (similar to how you dip bread for french toast). The sandwich then becomes customizable. My husband and I share this sandwich because I use 4 eggs and we also try to limit the amount of bread we consume daily. He likes bacon, and while I do (I mean, who doesn't?), I don't really eat it often. One side of the sandwich I add the bacon for him and then avocado on my side (he doesn't like warm avocado). I then shower it with chives (which add a mild onion flavor) and Gruyere cheese (which is slightly nutty and melts well). THIS sandwich, is "just right."

Ingredients
  

  • 2 slices sourdough bread
  • 4 large organic eggs
  • 1 slice uncured bacon
  • 1/2 cup red onion
  • 1/4 cup chives
  • 1/4 cup Gruyere cheese
  • 1/4 avocado
  • Everything Bagel Seasoning https://amzn.to/3snf4Pp **
  • organic olive oil

Instructions
 

  • Toast the bread for 3-4 minutes until light golden brown. Set aside.
  • If having bacon, place the bacon in the toaster at 375℉ for ~8-10 minutes. Keep an eye on it so it doesn't burn. Set aside.
  • In a small bowl, crack 4 eggs and add a pinch of kosher salt and a few grinds of black pepper. Whisk well to combine. Set aside.
  • Finely dice the red onion so you have about 1/2 cup. Over low to medium heat, heat a tsp of olive oil in the pan. Add the onions and a pinch of kosher salt and a few grinds of cracked black pepper. Mix to combine. Let it cook for 5-7 minutes, until the onions have softened and become translucent.
  • Once the onions have softened, place the scrambled eggs into the pan. Turn the heat down to low.
  • Place the bread on top of the egg mixture. Press down lightly. Leave it there for about 10-15 seconds.
  • Flip the bread.
  • Season the bread with the Everything Bagel Seasoning. Let it cook, undisturbed for about 5 minutes, until the eggs have set. You'll know when it's ready to flip when you can easily get a spatula under the bread.
  • Carefully flip the bread / egg mixture over.
  • Now add your fillings. Bacon, chives, cheese, avocado. While this is customizable I do advise against raw veggies that have a high water content, unless you cook them first and get rid of the water and then place the cooked veggies inside.
  • Close the sandwich. Press down lightly with a spatula. Let it sit for a few minutes. Flip and let it sit for another few minutes. This is to melt the cheese and get the bread a little toasty.
  • Cut the sandwich in half and enjoy!
