West African Collard Greens
My husband grew up eating collard greens being from the south. Me, being from NY only had them when I went to BBQ restaurants. This collard green recipe is vegetarian, actually vegan (many use smoked meat in their recipes) and has very “warm spices.” You can make this as mild or as spicy as you like. A few “must-haves” are the cloves, honey and lime juice (or other acid), which make it “just right.” I hope you enjoy as much as my family does!

Ingredients
- 4 lbs organic collard greens
- 1 red onion, diced
- 1 organic red bell pepper, diced
- 1 fresno pepper, diced
- 4 garlic cloves, minced
- 8 whole cloves
- 1/2 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp cinnamon
- 1/8 tsp nutmeg
- 1/8 tsp allspice
- 1 cup organic vegetable stock homemade or store bought
- 1 inch raw ginger, minced
- 2 tbs raw organic honey
- 1 lime zested first, juiced second
- Organic olive oil

- Fresh cracked black pepper
Instructions
- Wash the collard greens and then cut into bite size pieces
- Dice the red onion, chop the bell and fresno peppers. In a large stock pot over medium heat, place 2 TBS of olive oil in the pot. Place the chopped red onion, chopped bell and fresno peppers in the pot. Sprinkle with a pinch of salt and fresh cracked black pepper let saute for 7-10 minutes.
- Add the whole cloves, garlic cloves, ginger, cinnamon, garlic powder, nutmeg, all spice and smoked paprika in with the onion mixture. Let that cook for 2 minutes.
- Next start adding the collard greens. This will take several batches. Add a large handful and a pinch of salt. Let that cook down for a few minutes. Then continue to add large handfuls with a pinch of salt until all the greens have been added.
- Add the vegetable stock and 2 tbs of honey. Let that come to a boil and then reduce to a simmer. Cover and cook for 45 minutes.
- Once the greens have are done cooking taste and check to see if another pinch of salt is needed. If eating immediately add the lime zest and juice (or other acid if you don’t have lime juice). If eating at a later time, wait to add the lime. Remember to remove the cloves or let your guests know that they’re in there!
