Perfectly seasoned Guacamole

I hardly ever order guacamole at a restaurant because the prices start at $15 for a very modest portion and I'm often left saying "it needs more salt and lime juice!" Store bought guacamole is always lackluster in taste and the texture is more like baby food (pureed). I also limit the amount of preservatives I consume in general and since avocados start oxidizing within a few hours of them being cut open, store bought guacamole has preservatives in it... check your labels! I personally am a guacamole purest so don't like the additions of tomatoes. What makes this recipe "just right" are the additions of the lime zest and juice, along with a good amount of kosher salt. Avocados need a generous amount of salt and acid in order to really be crave able. Of course, omit the cilantro if you have some guests with the cilantro gene (yes, that's real)! Since it's football playoff season and most dishes err on the side of unhealthy, this is a great healthy option to add to your spread... or just make it on a Tuesday! Oh and make sure you wash the outside of your avocados before you slice them open. If the outside of the avocado is dirty (and it is because... it's gone a long way from a Mexican farm to your kitchen), when you slice it open, the dirt / bacteria gets on the pulp of the avocado and then you consume it.

Equipment

  • mortar and pestle optional
  • medium bowl
  • potato masher or fork
  • fine tooth grater

Ingredients
  

  • 2 avocados
  • 1 organic lime zested and juiced
  • 1/4 cup red onion finely chopped
  • 1 garlic clove finely grated
  • 1/4 cup organic cilantro optional
  • 1/4 tsp crushed red peppers optional
  • 1/2 tsp Kosher salt Diamond Crystal https://amzn.to/3ZRuGXG **
  • 1/4 tsp Fresh cracked black pepper

Instructions
 

  • Finely chop the red onion and finely grate the garlic clove.

  • Wash the lime, then zest the lime, and then juice it.
  • Wash the outside of the avocados. Slice open, carefully remove the pit and scoop out the pulp of the avocados. Place the pulp of the avocados in a large bowl or mortar and pestle. Add the onion, garlic, salt, pepper, chili flakes (if using), lime zest and juice. Mix to combine. Add the cilantro if using. Serve with your favorite chips and maybe cerveza!
