Apple Cake
This is definitely a good time of year to share this recipe. My grandmother has a plum torte (Kuchen) recipe which I intended to make for Rosh Hashanah. However, when I went to TJ's they were already on fall produce and were out of plums. Anyway, since it's traditional on Rosh Hashanah to have apples, I decided to try her recipe with apples instead. It was a hit! It's a very straightforward recipe with ingredients you most likely have. I added 1/2 the apple to the batter which keeps it from drying out. The lemon juice on top of the apples is what makes it "just right."

- 9 inch spring form pan
Ingredients
- 1 stick organic unsalted butter room temperature
- 3/4 cup organic cane sugar
- 2 large organic eggs room temperature
- 1 tsp pure vanilla extract
- 1 cup organic unbleached all-purpose flour sifted
- 1 tsp baking powder

- 1 organic lemon zested then juiced
- 1 organic apple Granny Smith / Fuji / Gala
- 1 tsp organic turbinado sugar
- organic cinnamon
Instructions
- Preheat oven to 350℉. Grease a 9 inch springform pan with the butter wrapper.
- In the bowl of a stand or hand mixer, cream the butter and sugar on medium for 5 minutes. Add the eggs one at a time, ensuring their incorporated before the addition. Add the vanilla and mix to combine. Scrape down the bowl and remix.
- In a medium bowl, sift the flour and baking powder. Add the lemon zest, and salt. Whisk to combine. Add the flour to the butter mixture in 3 additions, until just incorporated.
- Peel, core and dice 1/2 of the apple into 1/4 inch pieces. Add this to the batter mixture with a spatula. Add the batter to the pan.
- With the remaining apple, slice into very thin slices. Place it in the bowl, add the juice of 1/2 the lemon and mix to combine. Place the apple slices on top of the batter. Sprinkle the cinnamon and turbinado sugar on top.
- Bake for 45 minutes, until a toothpick comes out clean. Maybe serve with ice cream, but it's "just right" on it's own!
Notes
Note if you don't have a spring form pan, you can use an 8x8 square pyrex. Baking time may vary a bit, keep an eye on it. Â
