Apple & Date Kugel

Sweet vs Savory Kugel? Last week I posted an updated version of my grandmother's savory kugel. My husband requested a sweet version for Yom Kippur. My grandmother's sweet versions all use raisins. In fact, if you search the world wide web, all of the recipes I have found include raisins. I didn't have raisins, but had dates on hand. I figured, lets give it a try. I'm glad I did because it was great. The sweet kugel can be eaten as a side dish to a main dish. Kind of like how sweet potato pie is served on Thanksgiving. Although this is definitely not as sweet. It's slightly sweet from the dates and sugar, but balanced with the apple and lemon zest. The topping gives it great texture. It's "just right."

Ingredients
  

  • 8 oz organic wide egg noodles https://amzn.to/3PQgABl **
  • 2 tbs organic butter melted and cooled (plus more for topping)
  • 2 organic large eggs
  • 6 tbs organic raw cane sugar
  • 1/2 tsp pure vanilla extract or vanilla bean paste
  • 1-2 organic gala, fuji or granny smith apples depending on size, peeled, cored and diced
  • zest of 1 organic lemon
  • 1/2 cup cold water
  • 1/4 cup organic dried dates pitted and chopped
  • 1/2 tsp ground cinnamon plus more for topping
  • 1/4 cup organic plain bread crumbs

Instructions
 

  • Preheat oven to 350℉. Grease the 8x8 pyrex with butter wrappers.
  • Fill a stock pot with water. Bring to a boil, add a few tbs of kosher salt. Cook the pasta. Remove it 2 minutes under cooking directions on package for al dente. Drain and set aside.
  • In a large microwave safe bowl, place 2 tbs of butter and melt for 30 seconds.
  • Chop the apple(s) and dates into 1/4 inch pieces.
  • Once the butter has cooled, add the eggs, water, sugar, cinnamon, lemon zest, salt and cinnamon. Whisk to combine. Add the apples and dates. Switch to a spatula. Mix to combine. Add the pasta and mix to combine. Pour the mixture into the greased 8x8 pyrex.
  • Top with plain bread crumbs, sprinkle cinnamon all over and place small drops of butter on top. Bake for 45 minutes-1 hour, until the top is brown and a toothpick comes out clean. This can be served hot, warm, room temperature or cold!
