Baked Brie with Apricot Jam
I first tried a version of this at my brother's ex-girlfriend's Christmas dinner years ago. While the relationship didn't last, this appetizer made a lasting impression on me. Like most recipes, there are many iterations out there. While I like to make almost everything from scratch, there are certain items that are best store bought. Puff pastry is one of them. It's a very labor intensive food to make. Fortunately, Trader Joe's sells it and it doesn't have any additives or preservatives in it. Brie is such a funky cheese that I'm not really a fan of it on its own. However, paired with apricot jam, this appetizer is irresistible! I buy organic apricot preserves or jam (or you can make your own). This is a perfect hot appetizer to serve. It's easy and requires very little prep. Be sure to line your baking sheet with parchment paper, otherwise you'll be spending the next day or so trying to clean it. Once I package the brie and jam up, I brush it with an egg wash so it gets golden brown and top with a little turbinado sugar and flaky sea salt. This is "just right."

Ingredients
- 1 sheet puff pastry
- 1/4 cup organic apricot jam or preserves
- 12 oz brie round
- 1 organic egg
- pinch turbinado sugar https://amzn.to/46lvhTo **
- pinch flaky sea salt https://amzn.to/49Vyj3q **
Instructions
- Preheat oven to 350℉.
- In a small bowl, whisk together an egg and tsp of water.
- Place a sheet of parchment paper over the sheet pan.
- Remove the puff pastry from the fridge and place on the sheet pan.
- Smear a tbs of apricot preserves on the puff pastry in the center where you'll be placing the cheese. Place the brie on top. Smear the rest of the apricot preserves on top and around the circumference.
- Fold the puff pastry up like a package.
- Paint the egg wash all over the top and sides. Sprinkle with a little turbinado sugar and flaky sea salt.
- Bake for 25 minutes or until lightly golden brown. Serve immediately hot with crackers.
