Churro Style Donuts
Who doesn't love donuts or churros?!? Homemade donuts may sound intimidating, however this donut recipe comes together really quickly with very few ingredients that you definitely have on hand. What's great about it, you can customize the coating to your preference. You could use a dry coating, like sugar and cinnamon, or a glaze (milk or apple cider with powdered sugar). I've also included a dipping sauce which is optional but is sure to be a crowd pleaser. What makes this recipe "just right" is the addition of the warm spices into the dough.
Equipment
- 3 qt sauce pot
- wooden spoon

Ingredients
- 1 cup unbleached organic all-purpose flour
- 3 organic large eggs room temperature
- 1 cup filtered water
- 2 tbs organic raw cane sugar
- 2 tsp vanilla extract
- 4 tbs organic unsalted butter
- 1/2 tsp ground cinnamon
- 1/8 tsp nutmeg
- 1/8 tsp allspice
- 1/8 tsp cardamom

- 3 cups Organic avocado oil for frying
Coating
- 1/2 cup raw organic can sugar for the coating
- 2 tsp ground cinnamon for the coating
- 1/8 tsp nutmeg for the coating
- 1/8 tsp allspice for the coating
- 1/8 tsp cardamom for the coating
- 1/8 tsp kosher salt for the coating
Sauce
- 1 cup organic hazelnut butter
- 1/4 cup organic heavy cream or whole milk
Instructions
- In a small bowl mix the flour, spices (the first group of spices, not the coating) and salt.
- Place the water, 2 tbs of sugar and the butter in the sauce pan. Bring to a boil while whisking. Reduce the heat to low and add the flour and mix quickly with the wooden spoon. Continue to mix with the wooden spoon over low heat for 3 minutes to "cook" out the raw flour.
- Turn the burner off and take the pot off the heat. Let the mixture cool down a bit. After it's cooled down, one at a time add the eggs while mixing with the wooden spoon. After all 3 eggs are incorporated add the vanilla extract.
- Add the dough to a piping bag with a star tip (or plastic zip lock bag and snip the end).
- Place the oil in the sauce pot. Heat the oil over medium heat to 350 degrees F. (If you do not have a candy thermometer you can test the temperature of the oil with a small piece of dough. If it begins to sizzle immediately, it's good to go. If nothing happens, wait a few more minutes and try again). Squeeze the dough into the hot oil in 3-4 inch pieces. I suggest about 4 per batch. You don't want to crowd the pot. Fry the churros for 2 minutes on each side. Let the excess oil drip off.
- On a plate, mix the "coating ingredients." Once the churros are done, roll them in the coating ingredients. These are best served immediately.
- For the sauce, in a small pot over low heat combine the hazelnut spread and the cream (or milk). Mix until it's combined and a loose dipping sauce.
