Everything But The Bagel Maztah Brei
Matzah brei is a cross between a french toast and pancake dish using matzah. I grew up eating sweet matzah brei. My grandmother made it with eggs, milk, cinnamon and served with maple syrup. It's amazing! My husband wasn't feeling a sweet breakfast so I decided to try a savory brei. I started by sautéing red onion and red bell pepper in a little butter. The key to ensuring it doesn't dry out is soaking the matzah first, in very hot tap water, before you add it to the egg mixture. I add a generous sprinkle of everything bagel seasoning, hence the title. I used a high quality very sharp cheddar, just to add some nice extra flavor. The herbs and chili crisp definitely complete the dish and make it "just right."
Equipment
- 10 inch nonstick skillet with lid
- medium bowl or 8x8 pyrex dish
Ingredients
- 4 sheets of matzah
- 4 large organic eggs
- 1/2 cup finely diced onion
- 1/2 cup finely diced organic red bell pepper
- 1/4 cup organic high quality cheddar cheese freshly grated
- 1 tsp everything bagel seasoning
- kosher salt
- fresh cracked black pepper
- 1 tbs organic unsalted butter or olive oil
Toppings
- 1 tbs chopped organic chives
- 1 tbs chopped organic dill
- chili crisp optional
Instructions
- Finely chop the onion, bell pepper, shred the cheese, mince the dill and chives.
- In a 10 inch skillet, preheat over low heat. Add a tbs of butter or oil. Place the bell pepper and onion in the skillet. Add a pinch of salt and few grinds of cracked black pepper. Stir to combine. Let it soften for about 5-7 minutes while you prepare the rest of the dish.
- In a medium bowl or 8x8 pyrex, crack the eggs and season with a pinch of salt and few grinds of fresh cracked black pepper. Whisk to combine. Set aside.
- One at a time, run the matzah under the hottest tap water for about 30 seconds to soften. Add them to the egg mixture and, breaking up the matzah, and mix everything to combine. Let it sit while you cook the veggies.
- Add the matzah egg mixture to the pepper and onion mixture. Mix to combine. Sprinkle the everything bagel seasoning on top. Cover and cook undisturbed for 5 minutes.
- Sprinkle the cheese on top. Cover and cook for 2-3 minutes, until the cheese has melted.
- Remove from the pan. To plate, sprinkle the chives and dill all over. Add the chili crisp, if using and enjoy.
