Football Field 4 Layered Taco Flavored Dip

Born and raised in the NYC metro area you're either a Giants or Jets fan. I am a Giants fan. A friend last weekend asked me how I chose the Giants (especially since my dad is a Jets fan). My answer was, I honestly don't know. I just always remember rooting for the Giants. It's been a bit of an emotional roller coaster to say the least being a Giants fan during my lifetime. I have been alive for all 4 Giants Super Bowl wins ('87, '91, '08, and '12) although I was very young during the first 2 so don't really remember them well. The last 2 were very exciting (even though I had the flu for the '08 win)! The last time the Giants were in the post season was the 2016 season. To say I'm excited that they're in the playoffs now is an understatement. My husband and I typically go to our friend's house (who's a die hard Giants fan) for the games. Although he told us to "just bring ourselves," I just can't help it. I figured this layered taco dip would be a great addition to their spread. Also, I know our friend will appreciate the decorations! What makes this layered taco dip "just right" are the additions of the homemade taco seasoning (no fillers), the greek yogurt for acid, cream cheese for tang, and the homemade guacamole (previously posted)!

Equipment

  • 9x13 pyrex pan
  • medium bowl
  • 2 small bowls
  • piping bag or ziplock bag
  • small sauce pot
  • offset spatula

Ingredients
  

  • 16 oz can refried beans
  • 5 oz organic whole milk greek yogurt, divided room temperature
  • 8 oz organic cream cheese, divided room temperature
  • 1 1/2 cup organic medium spicy salsa

Guacamole Layer

  • 4 avocados
  • 1/2 cup red onion finely diced
  • 2 garlic cloves minced
  • 1/4 cup cilantro
  • 1 1/2 limes zested first juiced second
  • 1/2 tsp Kosher Salt Diamond Crystal https://amzn.to/3ZRuGXG **
  • 1/4 tsp Fresh Cracked Black Pepper

Taco Seasoning

  • 1 tbs chili powder
  • 1/2 tbs cumin
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp red pepper flakes
  • 1/2 tsp oregano crushed with your hands
  • 1/2 tsp kosher salt Diamond Crystal
  • 1 tsp fresh cracked black pepper
  • pinch of cayenne pepper optional

Instructions
 

Taco Seasoning

  • Combine all of the ingredients and mix. Set aside.

Guacamole

  • Wash the outside of the avocados. Cut open and scoop out the pulp and place in a medium bowl.
  • Finely dice the red onion, finely grate the garlic clove, chop the cilantro, zest and juice the lime. Add all of the ingredients to the avocado and season with salt and pepper. Mix to combine.

Layered dip

  • In a small sauce pot, place the beans and the homemade taco seasoning over medium heat and cook stirring for 5 minutes. This allows the spices to bloom so they're not raw. In a small bowl mix together the refried beans and 2 tbs of greek yogurt. Spread this with an offset spatula in the pyrex for the bottom layer.

  • In another small bowl, mix together the cream cheese and the remaining yogurt. Spread 3/4 of it onto the beans. Reserve the rest for piping. Next add the salsa layer and spread. Next add the guacamole on top.
  • Place the remaining cream cheese / yogurt mixture into a piping or ziplock bag (snip the corner for piping). Pipe lines for "yard" lines and "end zone." Write your favorite team in the end zone and enjoy!

On Making Ahead

  • Note, you can make the 1st 3 layers ahead of time (even a day in advance). I do suggest waiting to make the guacamole layer and finishing until almost ready to serve since the avocados do start to oxidize within a few hours of opening.
