Mixed Berry Jam
I love making homemade jam because it's quick and easy. If you have frozen fruit, this is a great time to use it. Also, if you have some fruit that's past its 'prime' but obviously still good, that would be great as well. Making homemade jam (or anything else for that matter) is much healthier because you can control the ingredients (quality and quantity). I use all organic fruit which is important especially since berries tend to have a lot of pesticides on them. What makes this jam "just right" is the variety of berries I use along with a splash of high quality balsamic vinegar at the end. It's slightly sweet and slightly tart... I think it's well balanced and "just right."
Equipment
- medium sauce pot
- immersion or regular blender
- sieve optional
Ingredients
- 12 oz frozen or fresh mixed berries I used blackberries, strawberries, raspberries and blueberries
- 1 tbs organic raw honey
- 1 tbs organic pure maple syrup
- 1 tbs organic balsamic vinegar

Instructions
- In a medium sauce pot, over medium heat add all of the ingredients and 1/2 cup of water. Bring to a boil, reduce to a simmer and cook for 15 minutes with the top off until the water has evaporated and the jam coats the back of a spoon. (Note, once it cools in the refrigerator it will tighten up more.) If you have an immersion blender, blend until pureed. If you don't, transfer the mixture to a blender. Remove the center so the steam can escape and put a towel over the hole. On the lowest setting, blend and then slowly increase the speed and blend until smooth. Be careful! I like a little texture in my jam so I then transfer to a container and let it come to room temperature and then refrigerate. If you don't like the texture (seeds), pour the mixture through a sieve to remove the seeds.
