Sweet & Spicy Chicken Wings
I'm a day late for my wings. It's all good because these wings should not be reserved for just Superbowl Sunday. I actually grill them in the summer (recipe to come in a few months). Once you make these wings, they'll be requested often. Start with good, high quality chicken wings. I mean, that is the star of the show. I truly believe, no sauce or seasoning can replace or mask the quality of a protein. Louisiana hot sauce is the hot sauce of choice in this household because my husband is Southern. There's no alternative. Side note, I've even seen it served at weddings! Anyway, the hot sauce with the honey allows for a really nicely balanced sauce. It gets flavored with the ginger and garlic, but is rounded out by the vinegar and butter, of course. Don't forget to put the wings back into the oven after you coat them with the sauce. That's what makes this recipe "just right."

- 1 small sauce pot

- 2 large bowls
- unbleached parment paper
Ingredients
- 3 lbs organic chicken wings
- 1 tbs Kosher Salt Diamond Crystal https://amzn.to/3ZRuGXG **
- 1/2 tsp Freshly Cracked Black Pepper
- 1 tsp garlic powder
- 1 tsp smoked or sweet paprika
- 1 tbs baking powder aluminum free
Sauce
- 3 tbs organic unsalted butter divided
- 3 large garlic cloves minced
- 1 inch ginger minced
- 1/3 cup Louisiana Hot Sauce
- 1/3 cup local organic honey
- 1 tbs apple cider vinegar
Instructions
- Preheat oven to 425 degrees F.
- In a large bowl place the wings, baking powder, salt, garlic powder, fresh cracked black pepper, and paprika. Mix to combine.
- Line the sheet pans with parchment paper for easier clean up. Place the wings on the sheet pans. Make sure they don't touch each other (otherwise they'll steam and not brown). Bake for 20 minutes. Flip and bake for another 20 minutes.
- Meanwhile, mince the garlic and ginger. In a small sauce pot over low heat, place 1 tbs of butter in it. Let it melt. Add the ginger and garlic. Whisk and let it cook for a couple of minutes until it becomes very fragrant. Add the hot sauce and honey. Whisk to combine. Continue cooking for 5 minutes. Turn the heat off and add the vinegar and remaining butter. Whisk to combine.
- Pour the sauce into a clean bowl. Once the wings are done, add the wings to the bowl and throughly toss and coat the wings. Place the wings back on the sheet pans and into the oven for 5 more minutes. This will allow them to brown and caramelize. Place the wings back into the bowl to coat with any excess sauce and serve.
