Tuna Salad (melt) Sandwich
For me, store bought tuna salad is always heavy on the mayo and celery. I'm not really a fan of either so I like to make my own. Homemade tuna salad is often lacking something (and I think that something is acid). Salt gives you compliments but acid makes the people come back! I like to add hard boiled eggs for additional protein, flavor, and to stretch this for 2 sandwiches. What make this tuna salad "just right" are the additions of the capers (offers salinity aside from salt), dijon mustard (the acid), cornichons (texture and acid), and dill (freshness). You can add cheese for a tuna melt!

Ingredients
- 5 oz can of solid yellow fin light tuna in olive oil pole and line caught
- 2 organic large eggs
- 1 small organic carrot peeled and finely chopped
- 1 tbs raw red onion finely chopped
- 1 tbs organic red bell pepper finely chopped
- 4 cornichons finely chopped
- 2 tsp capers
- 1 tbs organic mayonnaise
- 1 tbs dijon mustard
- 1 tsp fresh dill chopped
- 2 slices of sourdough bread
- 2 tbs organic pepper jack cheese or preferred cheese (not pre shredded)

- 1/8 tsp fresh cracked black pepper
Instructions
- Fill a small sauce pot with room temperature water. Place the eggs in there and over medium heat let it come to a boil. Once it's boiling, turn it off, cover it and set a timer for 6 minutes.
- Meanwhile, place the tuna and it's oil into the bowl. Peel and finely chop the carrot, red onion, bell pepper, cornichons and dill. Place in the bowl along with the tuna. Mix in the mayonnaise and dijon mustard.
- Toast the slices of bread for 3-4 minutes or until desired doneness.
- Once the eggs have finished cooking. Run them under cold water until they have cooled down enough to handle. Peel the eggs and place in the bowl with the tuna mixture. Add the salt and pepper. Break up the eggs and mix to combine all of the ingredients.
- Divide the tuna mixture evenly between the slices of bread. If making a tuna melt, shred the cheese (note the reason I suggest buying blocks of cheese and shredding yourself is because pre shredded cheese has anti caking agents in it. It's purpose is to prevent the cheese from clumping, however they're additional chemicals that the body doesn't need). Place the cheese on top of the tuna and toast for another 2 minutes or until the cheese has melted. Serve and enjoy.
