Weeknight Tex-Mex Ground Beef Tacos
I think ground beef tacos carry a bit of nostalgia. I'm calling them weeknight because they're quick and easy to make, however they definitely don't lack in flavor. I use organic, grass fed ground beef because it matters (you can sub for ground chicken or turkey)! I make my own taco seasoning which makes a big difference too! It doesn't have fillers, preservatives, or anti-caking agents like the packets and you can control the seasoning and salt. I use organic tomato paste and some organic chicken stock to make it saucy, however water will work in lieu of the stock. The accoutrements arguably make the dish. I add fresh avocado, raw red onion, organic salsa, cilantro, organic sharp cheddar cheese, and scallion tops. Don't forget a squeeze of lime at the end. It's "just right."

Ingredients
- 1 lb grass fed organic ground beef (80 or 85% fat)

- 3/4 cup organic chicken or beef stock (or water)
- 1 tbs chili powder
- 1/2 tbs ground cumin
- 1/2 tsp dried oregano crushed
- 1/2 tsp garlic powder
- 1/2 tsp onion powder

- 1/2 tsp fresh cracked black pepper https://amzn.to/3RoH0wh **
- 1/4 tsp cayenne pepper
For serving
- 12 corn tortillas (hard or soft shells)
- organic cheddar cheese freshly grated
- organic salsa
- avocado
- red onion finely chopped
- scallions finely chopped
- lime
Instructions
- Heat a large heavy bottom skillet over medium high heat.. Add the ground beef and season with 1 tsp of kosher salt and 1/2 tsp of fresh cracked black pepper. Cook, breaking up the meat for about 5 minutes.
- Add the chili powder, cumin, dried oregano (crush your hands, it'll be more potent), onion powder, garlic powder, and cayenne pepper. Mix to combine. Lower the heat to medium low and cook for another 2 minutes (until the meat is no longer pink).
- Add the tomato paste and let it cook and caramelize for about 2 minutes. Next add the stock (or water). Bring to a boil and reduce to a simmer. Cook for another few minutes until the sauce has thickened.
- Meanwhile, if using soft tortillas, if you have a gas stove, on the open burner place a taco on it and cook for 30 seconds on each side. If you have an electric or induction, in a dry pan warm for 30 seconds on each side. You can also warm in your toaster oven or regular oven. For hard shell tacos, warm them up in the toaster oven or regular oven (at 350℉ for 3-5 minutes). To serve, add some ground beef mixture to the taco shell and invite everyone to add their desired toppings.
Notes
