Acai bowl

It's obviously been oppressively hot throughout the country. Even turning on the stovetop generates too much heat for me right now! Enter, the acai bowl, which in NYC costs $20 and is 1/2 the size of the portion when made at home. TJ's sells portioned, frozen, UNSWEETENED acai packets. They're ~$4 for 4. I like to add coconut water as the base. It's hydrating and adds a nice, no-sugar added sweetness to the mixture. The frozen banana helps thicken the acai base. The fun and delicious part is all of the toppings. Use fresh, organic fruit. If you don't have peanut butter, sub for almond, cashew or a seed butter. The chia and hemp seeds add a nice texture and bee pollen is great for immunity health. That's what makes this "just right."

Ingredients
  

  • 1 packet frozen acai (unsweetened) https://amzn.to/46G7tKo **
  • 1 frozen banana
  • 4 oz coconut water
  • 1 banana
  • 1/4 cup organic blueberries
  • 1/4 cup organic raspberries
  • 1/2 cup organic strawberries
  • 1 tsp organic chia seeds
  • 1 tsp organic hemp seeds
  • 1 tsp organic flaxseed meal
  • 1 tsp bee pollen
  • 2 tbs organic peanut butter
  • pinch Kosher Salt Diamond Crystal https://amzn.to/3ZRuGXG **

Instructions
 

  • In the blender add the coconut water, frozen acai, frozen banana and pinch of kosher salt. Blend on high until completely smooth.
  • Pour into a bowl and top with fresh fruit, seeds and toppings. Enjoy

      Thanks! It may not be an issue, depends on how allergic to bees someone is, but don’t want to be the cause of any problems 🙂
