Charoset is a side dish or appetizer that is served during the Passover holiday. It is traditionally made with chopped nuts, apples, a sweetener, and red wine. The red wine that is typically used is Manischewitz which is a very sweet Kosher for Passover wine. Manischewitz used to be the only "K for P" wine game in town. However, nowadays you can find good quality K for P wines out there. I decided to go for Rioja. It's not a sweet wine so that's why I used both (organic) brown sugar and (organic) honey. I definitely suggest using a wine that you enjoy drinking though. The combination of apples provide a nice balance (Granny Smith is tart and Gala and Fuji are naturally sweeter). The cinnamon enhances the sweetness without adding sugar. Toast the walnuts, it makes a difference. Don't forget the salt because it balances out the dish. Also, make it a day in advance so the flavors can develop. That's what makes this "just right."
In large bowl combine all of the ingredients and mix to combine.

Note I did not use a sweet wine. If you use a sweet wine (like Manishewitz I would adjust the sweetener accordingly). Note by using a combination of apples you balance out the flavors.
