Sloppy Joe's definitely give a throwback to childhood. They were often made with store bought sauce. The way I make this "just right" is by making a homemade sauce. I used organic ground chicken but ground (organic) beef would of course be great as well. I added a half of a jalapeno for some heat. Note the seeds and membranes (white pieces inside the jalapeno) have all the heat. If you want to decrease the heat, scoop out the seeds and membranes and discard. Make sure you wash your hands very thoroughly and please don't touch your face (or anything else on your person!). You can use more or less based on your preference. I added some organic grated cheddar at the end, because, everything's betta with chedda! Serve this with a salad and you'll have a quick weeknight meal! It's "just right."
Dice the onions, finely chop the jalapeno, and grate your cheese.
Heat a large saute pan over medium high heat. Add a tbs of olive oil.
Add the onions and jalapeno. Saute for 5 miutes until the onions are transulcent. Add the tomato paste and cook for 2 minutes, until it begins to caramelize. Add the garlic powder, chili powder, cumin, a pinch of salt and a few grinds of black pepper.
Add the ground chicken, 1/2 tsp of kosher salt and a few grinds of fresh cracked black pepper. Cook stirring, breaking up the meat for 5-7 minutes, until it's cooked through. Add the diced tomatoes and 1/2 cup of water a pinch of kosher salt and a few grinds of fresh cracked black pepper. Cook for 5 minutes, until the liquid has reduced. Add the cheese and stir to combine. Check to see if it needs another pinch of salt / grinds of fresh cracked black pepper.
To plate, divide the mixture evenly on top of the bottom bun and put that top bun on top!
